Red Cabbage Cake with Duck Meat

The perfect red cabbage cake with duck meat recipe with a picture and simple step-by-step instructions.

for covering

  • Beans for blind baking about 500 gr.
  • 400 g Red cabbage
  • 1 piece Bay leaf
  • 3 piece Allspice grains
  • 1 piece Apple Elstar
  • 1 tbsp Butter
  • 1 tbsp Honey
  • 2 tbsp Goose fat
  • 1 piece Onion
  • 300 g Duck meat
  • 2 piece Garlic cloves chopped
  • 1 tbsp Finely chopped parsley
  • 1 tsp Chilli flakes
  • Salt and pepper

for the cast

  • 100 ml Milk
  • 50 ml Cream
  • 3 piece Organic eggs
  • 1 tsp Fresh thyme
  • Salt and pepper

  • 5-6 Apfelspalten zum Garnieren
  • Parsley for sprinkling

Preparation of the puff pastry base

  1. Place the puff pastry in a baking pan (26 cm diameter), pull up one edge, cut out the excess pastry and save for decoration.
  2. Line with baking paper, spread the dried beans on top and bake the puff pastry base in a preheated oven at 160 degrees for about 15 minutes.
  3. Remove the beans and baking paper and let the cake base cool down.

Preparation of the topping

  1. Cut the red cabbage into small pieces. Bring salted water to the boil in a saucepan. Add the bay leaf, allspice and red cabbage and cook for 7 minutes. Then strain and drain well.
  2. Peel the apple, remove the core and dice. Melt honey and butter in a pan and toast the apple cubes in it. Add red cabbage. Season with salt and pepper and set aside.
  3. Peel the onion, wash it and chop it into small pieces. Wash the duck meat, pat dry and cut into pieces about 2 cm in size.
  4. Heat the goose lard in a pan and roast the duck vigorously. Add onion cubes and fry for 3 minutes. Add garlic and red cabbage (remove bay leaf and allspice grains) and mix well. Season with salt, pepper, parsley and chilli flakes. Apply the mixture to the pre-baked puff pastry.

Preparing the cast

  1. Mix the milk, cream, eggs and thyme, season with salt and pepper.

  1. Empty the pouring over the red cabbage duck topping. Decorate the cake with the remaining puff pastry and apple wedges and bake in a preheated oven at 180 degrees for 30-35 minutes until golden brown.
  2. Remove, remove from baking pan, sprinkle with parsley, divide and enjoy.
