Red Cabbage Pasta with Seitan Duck
The perfect red cabbage pasta with seitan duck recipe with a picture and simple step-by-step instructions.
- 500 g Spelled spaghetti
- 1 small Red onion
- 400 g Fresh red cabbage
- 200 g Seitan duck (e.g. from Vantastic Foods, the fillet)
- 1 El Balsamic vinegar
- 100 ml Red grape juice (or Red wine)
- 1 Tl Fruit sweetness or agave syrup
- 200 ml Plant milk
- 1 El Cashew butter
- 100 ml Vegetable broth
- 100 g Red seedless grapes
- Salt pepper
- Cut the red cabbage into fine strips. Finely dice the onion. Cut the seitan fillet into slices. Halve the grapes.
- In a deep saucepan, first fry the onion cubes in a little olive oil until translucent. Then add the red cabbage and cook for another 5 minutes. Deglaze with balsamic vinegar and grape juice. Add the stock, vegetable milk and fruit sweetness. Stir in cashew butter. Season to taste with salt and pepper. Let simmer for about 15 minutes.
- Cook the spaghetti according to the instructions on the packet.
- Slowly fry the seitan slices in oil on both sides until they are golden brown.
- Serve the spaghetti with seitan and red cabbage and top with the halved grapes.
- The dish gets a special flavor when freshly chopped pistachios are sprinkled over it.
