Raw food – easy to prepare
Anyone who remembers it will know that this salad was always a hit at East German raw vegetable buffets, alongside white cabbage salad. Grate the red cabbage relatively finely and toss with 1 teaspoon of salt. Wait 5 minutes, then knead the cabbage thoroughly for at least 5 minutes. This is important to give the salad the right consistency. Add the herb vinegar, lemon juice, salt, pepper, and sugar. It’s important to let the salad marinate in the refrigerator for a few hours. Then season again to taste. It keeps relatively well in the refrigerator.
