Red cabbage salad with pineapple

Ingredients for 4 servings:

  • ½ small head of red cabbage
  • ½ pineapple, fresh
  • 2 tbsp oil (safflower oil)
  • 2 tbsp vinegar (apple cider vinegar)
  • Salt
  • Pepper, freshly ground
  • ½ tsp honey
  • 1 tbsp walnuts, chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Finely shred or chop the red cabbage (if the raw cabbage is too tough for you, you can blanch the leaves first). Peel the pineapple. If the stem is woody, remove it. Chop the pineapple. Combine the oil, apple cider vinegar, salt, pepper, and honey, then mix with the cabbage and pineapple. Sprinkle with the chopped nuts.
