Ingredients for 8 servings:

  • 1 head of red cabbage
  • Clarified butter
  • 1 slice(s) bacon, fattier
  • 4 tbsp sugar
  • 5 tbsp balsamic vinegar
  • 5 tbsp red wine
  • 1 orange(s), peel
  • 8 cloves
  • 5 bay leaves
  • 6 apples, (Boskop)
  • Water
  • 2 onions
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Quarter the red cabbage and slice into strips. Fry the bacon in a large pot, add the clarified butter. Finely dice the onions and cook until translucent. Dice the apples and add the diced apples from 5 of them, sprinkle with sugar, and caramelize slightly. Add the cabbage and deglaze with vinegar and red wine. Peel the orange, press the cloves into the orange peel, and add it to the cabbage along with the bay leaves. Add enough water to cover the bottom. Then simmer the whole thing at medium heat for 45 minutes. Add the last apple and sauté for another 15 minutes. Season with salt and pepper. Remove the peel and bay leaves.
