Ingredients for 1 servings:

  • 4 handfuls of red clover flowers
  • 1 handful of dandelion flowers, without green
  • 1 handful of thyme flowers
  • 1 lemon(s)
  • 1 kg sugar
  • 500 g gelling sugar, 3:1
  • 1 liter of water

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with dandelion and thyme flowers

Slice the lemon, simmer uncovered in 1 liter of water with the blossoms and sugar for half an hour. Let cool and strain. Squeeze the blossoms well. Stir the gelling sugar into the syrup and cook according to the package instructions. Once the syrup has set, pour into small jars and seal immediately. Delicious on a breakfast roll, but also for seasoning game or sweetening tea.
