Red Lentil Soup

The perfect red lentil soup recipe with a picture and simple step-by-step instructions.

  • Some oil for the pot
  • 1 tablespoon Red curry paste
  • 1 Onion
  • 2 teaspoon Chopped ginger
  • 200 g Lentils red
  • Curry powder as needed
  • 1 Peppers yellow
  • 2 Carrots
  • 200 g Sweet potato
  • 750 ml Chicken broth
  • 400 ml Coconut milk
  • Salt pepper
  • 0,5 Lemon fruit juice
  • Coreander
  1. Prepare: finely chop ginger and onions. Wash, peel and cut the vegetables into cubes. Put the lentils in a colander and rinse.
  2. Heat some oil in a large saucepan. Melt the curry paste in it. Add onions and ginger and sauté in them.
  3. Add the red lentils to the saucepan and sauté briefly. Then add peppers, carrots and sweet potatoes. Deglaze with broth, add coconut milk and enough broth to cover everything. Let everything simmer for about 45 minutes until the lentils disintegrate and the vegetables are cooked through.
  4. When everything is done, remove the pan from the heat and puree everything. If the soup is too runny, thicken it with a little cornstarch. To do this, stir the starch in a little cold water and then add it, otherwise it will clump.
  5. Season the soup with salt, pepper and lemon juice. Serve with fresh coriander or herbs to taste.
