Ingredients for 2 servings:
- 1 persimmon, overripe
- 3 small tomatoes, approx. 150 g
- 1 small bell pepper(s), red
- 1 orange(s), the juice
- 1 tsp horseradish, freshly grated
- some mint leaves, for garnishing
Instructions

Remove the stem end of the persimmon and chop it into large pieces. Place it in a blender or puree with an immersion blender. Quarter the tomatoes and add them. Peel the bell pepper and add them. Pour in the juice of one orange and puree everything until smooth. If the smoothie is still very thick, add a little more juice. Pour the smoothie into two large glasses and top each with 1/2 teaspoon of horseradish. Garnish with mint, if desired.
