Ingredients
- 500 g Cooked potatoes
- 100 g Beetroot from the glass
- 250 g Herring fillet
- 4 Gherkins
- 1 Apple
- 2 Spring onions
- Chopped fresh parsley
- Chopped dill
- Marinade:
- 1 a cup Sour cream
- 2 tbsp Beetroot juice
- 3 tbsp Freshly squeezed lemon juice
- Salt
- Pepper from the grinder
- Sugar
Instructions
- Peel the potatoes and cut them into slices. Cut the beetroot, matjes, pickles and the peeled apple into small pieces, the spring onions into rings.
- For the marinade, mix the sour cream with beetroot juice, lemon juice, salt, pepper and a little sugar. Fold in the salad ingredients loosely and let them steep.
