Red Matjes Potato Salad

The perfect red matjes potato salad recipe with a picture and simple step-by-step instructions.

  • 500 g Cooked potatoes
  • 100 g Beetroot from the glass
  • 250 g Herring fillet
  • 4 Gherkins
  • 1 Apple
  • 2 Spring onions
  • Chopped fresh parsley
  • Chopped dill
  • Marinade:
  • 1 a cup Sour cream
  • 2 tbsp Beetroot juice
  • 3 tbsp Freshly squeezed lemon juice
  • Salt
  • Pepper from the grinder
  • Sugar
  1. Peel the potatoes and cut them into slices. Cut the beetroot, matjes, pickles and the peeled apple into small pieces, the spring onions into rings.
  2. For the marinade, mix the sour cream with beetroot juice, lemon juice, salt, pepper and a little sugar. Fold in the salad ingredients loosely and let them steep.
