Ingredients
 

  • 500 g Cooked potatoes
  • 100 g Beetroot from the glass
  • 250 g Herring fillet
  • 4 Gherkins
  • 1 Apple
  • 2 Spring onions
  • Chopped fresh parsley
  • Chopped dill
  • Marinade:
  • 1 a cup Sour cream
  • 2 tbsp Beetroot juice
  • 3 tbsp Freshly squeezed lemon juice
  • Salt
  • Pepper from the grinder
  • Sugar

Instructions
 

  • Peel the potatoes and cut them into slices. Cut the beetroot, matjes, pickles and the peeled apple into small pieces, the spring onions into rings.
  • For the marinade, mix the sour cream with beetroot juice, lemon juice, salt, pepper and a little sugar. Fold in the salad ingredients loosely and let them steep.
