Ingredients for 1 servings:
- 1 jar tomatoes, dried in oil
- ½ tube(s) tomato paste
- 1 can cashew nuts
- 8 cloves garlic
- 1 tsp, levelled honey
- olive oil
- salt and pepper

Roast the cashews (without oil, even if they come roasted from a can). Peel the garlic and drain the sun-dried tomatoes. Blend the sun-dried tomatoes, tomato paste, cashews, garlic, honey, and plenty of olive oil. If necessary, add more olive oil until the pesto is smooth. Season to taste with salt and pepper.
