Ingredients for 2 servings:
- 100 g grain (soft wheat)
- 2 tomatoes
- 1 red bell pepper(s)
- ½ small onion(s)
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 2 tbsp ajvar
- salt and pepper
- flat-leaf parsley

Working time approx. 10 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 10 minutes
Quick summer salad
Cook the soft wheat flour according to the package instructions until al dente and toss while still warm with the dressing made from olive oil, lemon juice, and ajvar. Let cool. Finely dice the tomato, bell pepper, and onion, mix with the soft wheat flour, and season with salt and pepper. Let it sit in the refrigerator for about 2 hours. Stir in the chopped parsley before serving. Tip: Feta cheese also goes well with this salad.
