Ingredients for 4 servings:

  • 20 g tomato paste
  • 10 g tomato ketchup
  • 20 g water
  • 2 tsp Pul Biber and/or chili flakes

Instructions

Working time approx. 5 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 5 minutes

Mix together tomato paste, ketchup, and water. You can achieve the desired consistency with a little more or less water. Stir in 2-3 teaspoons of pul biber or chili flakes, or a combination of both. Let it steep for 1 hour. The amount of pul biber or the spiciness of the chili flakes determines the spiciness of the sauce; you can vary this as desired. Use hot chili flakes sparingly and in smaller quantities than with pul biber. This sauce is not intended as a standalone doner sauce, but rather as an addition to yogurt or garlic sauce if you want your doner spicy. It also goes well with Chinese food as a substitute for sambal oelek.
