Red Vanilla Compote

Spread the love

Ingredients for 10 servings:

  • 1 tbsp blueberries (frozen)
  • 1 pc. raspberries (frozen)
  • 1 point strawberries
  • 1 jar sour cherries with juice
  • 350 ml grape juice, red
  • 350 ml blackcurrant juice
  • 2 packets of pudding powder (vanilla)
  • 3 tbsp brown sugar, more if needed

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

super simple recipe for a large portion

Place the fruit and juice (reserve some to mix with the pudding mix) in a saucepan. Add the sour cherries, complete with their juice. Once the frozen fruit has thawed, lightly mash the raspberries and strawberries with a masher. Mix the pudding mix with the reserved juice and the sugar. As soon as the fruit and juice mixture begins to boil, add the pudding mix, stir, and bring to a boil. Once cooled, the red fruit compote will keep for several days in a container in the refrigerator. It’s just as delicious on its own as it is with yogurt, quark, mascarpone cream, or simply with whipped cream. Tip: You can refine the whole thing with a touch of cinnamon. If you like it a little more “tipsy,” you can add some of the juice to a fruity red wine or berry wine as a variation.
