Ingredients for 2 servings:

  • 4 herring fillets in oil
  • 125 ml red wine (Merlot)
  • 125 ml white wine vinegar
  • 125 g sugar
  • 2 bay leaves, fresh
  • 5 juniper berries
  • 1 onion(s)

Instructions

Working time approx. 10 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 5 minutes; Total time approx. 12 hours 15 minutes

Remove the oil from the herring fillets. Peel the onion and slice it into thin rings using a cucumber slicer. Press the juniper berries into the oil. Bring the red wine, vinegar, sugar, bay leaves, juniper berries, and onion rings to a boil, simmer for three minutes, and then let cool completely. Remove the bay leaves and juniper berries. Cut the herring fillets into bite-sized pieces, layer them in a suitable container, and pour the stock over them. Seal the container and let it marinate overnight.
