Ingredients for 2 servings:

  • 2 slices of bread
  • ½ bell pepper(s), green
  • ½ bell pepper(s), red
  • 2 eggs
  • 50 g diced ham
  • 50 g cheese, grated
  • 2 tbsp clarified butter or oil

This sophisticated omelet sandwich is a delicious and original breakfast option, but also tastes great in the evening.

Cut the washed and deseeded bell peppers into cubes. Whisk the two eggs. Using a sharp knife, cut out the insides of the bread slices, leaving a border no more than one centimeter wide. Heat 1 tablespoon of clarified butter or oil in a pan and fry half of the bell pepper and ham cubes for about one and a half minutes. Push the bell pepper and ham cubes together and add the crust to the pan, enclosing the bell pepper and ham cubes. Fry everything for about a minute, then pour half of the beaten egg over the bread filling. Spread half of the grated cheese on top. Let the egg set briefly, then place the sliced ​​bread on top of the filling and press down lightly. Fry for another 2.5-3 minutes, then turn over. After another minute, remove from the pan and serve. Repeat with the second slice of bread and the remaining ingredients. You can also use a large pan and cook both slices of bread at the same time.
