Ingredients for 2 servings:
- 2 slices of bread
- ½ bell pepper(s), green
- ½ bell pepper(s), red
- 2 eggs
- 50 g diced ham
- 50 g cheese, grated
- 2 tbsp clarified butter or oil

This sophisticated omelet sandwich is a delicious and original breakfast option, but also tastes great in the evening.
Cut the washed and deseeded bell peppers into cubes. Whisk the two eggs. Using a sharp knife, cut out the insides of the bread slices, leaving a border no more than one centimeter wide. Heat 1 tablespoon of clarified butter or oil in a pan and fry half of the bell pepper and ham cubes for about one and a half minutes. Push the bell pepper and ham cubes together and add the crust to the pan, enclosing the bell pepper and ham cubes. Fry everything for about a minute, then pour half of the beaten egg over the bread filling. Spread half of the grated cheese on top. Let the egg set briefly, then place the sliced bread on top of the filling and press down lightly. Fry for another 2.5-3 minutes, then turn over. After another minute, remove from the pan and serve. Repeat with the second slice of bread and the remaining ingredients. You can also use a large pan and cook both slices of bread at the same time.
