Refreshing jam with kiwi, ginger and mint

Ingredients for 1 servings:

  • 1,400 g kiwi(s), ripe, peeled
  • 100 g ginger, washed, unpeeled
  • 1 handful of mint leaves
  • ½ lemon(s), juice
  • 750 g gelling sugar 2:1

Instructions

Working time approx. 15 minutes; Rest time approx. 10 hours; Cooking/baking time approx. 5 minutes; Total time approx. 10 hours 20 minutes

Place the kiwis in a large saucepan. Add the finely chopped ginger, mint leaves, lemon juice, and gelling sugar, and blend everything thoroughly. Then return to the stove and bring to a boil on high. Stir continuously to prevent burning. Once the mixture is bubbling, continue to simmer for 5 minutes. Don’t forget to stir! Caution: It will splash! You may want to test for settling. Take a small, cold plate and drop a few drops of the cooked mixture onto it. If it sets, it’s fine. Otherwise, let it simmer for another 1-2 minutes. Then pour the jam, while it’s still hot, into sterile jars and seal. Important: Work neatly to prevent mold from forming!
