Reggie´s Spaghetti Muffin (Black and White)
The perfect reggie´s spaghetti muffin (black and white) recipe with a picture and simple step-by-step instructions.
For the dough:
- 330 g Sifted flour
- 200 g Sugar
- 100 g Melted butter
- 3 M Eggs
- 2 tsp Cocoa
- 1 packet Vanilla sugar
- 2 tbsp Baking powder
- 200 ml Milk
For the “spaghetti”:
- 250 ml Cream
- 50 g Dark chocolate
- 50 g Chocolate white
Aside from that:
- 12 piece Muffin tins
- 2 piece Disposable piping bags
- 2 piece A syringe without a needle
The dough:
- Melt the butter and let it cool down. Separate eggs and chill egg whites.
- Mix the milk, egg yolks and cooled butter well, add the sugar. Add the sifted flour, stirring constantly, with the baking powder to the dough and stir it until it lumps.
- Preheat the open to 180 ° C and equip the baking pan with muffin molds. (alternatively you can of course grease the sheet metal)
- Beat the egg whites with a pinch of salt to form an egg whites. Attention: it is best to beat the egg directly from the refrigerator (cold), an electronic hand mixer simplifies the whole thing.
- Using a dough lifter, lift the firm egg whites under the dough and separate the dough.
- For the dark part, add 2 level teaspoons of cocoa in one half. Use the vanilla sugar for the light half. Caution: Since cocoa is very dry, it may be necessary to take a sip of milk to adjust the consistency of the dough to the light dough.
- Now fill the muffin molds with light and dark dough as you wish, so that cow stains, patterns or layers are created. Place the muffins in the oven for about 20 minutes and, after removing them, let them cool down.
The spaghetti”:
- 2 Heat small pots with 125 ml of cream each (cream must not boil!) And melt dark and white chocolate in them. Put the flavored cream in the refrigerator for 2 hours.
And then?
- Take the cream out of the refrigerator after two hours and whip both variants. Attention: An electronic hand mixer is also suitable for this.
- Carefully cut the top of the muffins down and pour the whipped cream into the piping bags. Cut only so little from the bottom of the piping that a thin thread (spaghetti dimensions) can come out or alternatively use a syringe (takes forever!).
- Carefully put white whipped cream on 6 undersides, creating a spaghetti pattern. Carefully put dark chocolate cream on 6 undersides, creating a spaghetti pattern. Put the hoods back on the muffins with cream and the fun is done! = D
- Tip 12: If you put it back in the fridge for a while, the whipped cream will be even nicer!
