Ingredients for 4 servings:
- 500 g quark
- 50 g sugar
- 3 packets of vanilla sugar
- 50 g butter, very soft
- 2 eggs
- 1 pinch of salt
- 1 pack of pudding powder, vanilla OR
- 35 g starch flour
- 120 g semolina
- 100 ml milk or buttermilk
- ½ tsp baking powder

Grandma’s recipe
Cream the softened butter with vanilla sugar, sugar, and salt until creamy. Gradually add the eggs, one at a time, and continue beating vigorously. Add the quark a spoonful at a time and continue beating. Add the semolina, pudding powder or starch, baking powder, and (butter) milk, and continue beating until well blended. Cover the bowl and let the batter rest for 30 minutes. Once it has rested, stir briefly again. Heat a little oil in a pan and add a few batter portions. (I used a large tablespoon and added several small portions to the pan.) As soon as the top surface starts to bubble, turn the batter over and bake until golden brown. Do not overheat the pan, or the batter will burn. These quark and semolina pancakes taste great both warm and cold with sugar and cinnamon or applesauce. If you don’t like it too sweet, you can reduce the sugar. If you prefer a lower calorie diet, you can omit the butter and replace the sugar with sweetener.
