Ingredients for 1 servings:
- 250 g flour
- 1 tsp baking powder
- 100 g sugar
- 1 packet of vanilla sugar
- 1 pinch of salt
- 1 egg(s)
- 125 g butter
- 300 g rhubarb, cleaned, peeled, diced
- 250 g apples, cleaned, peeled, diced
- 60 g sugar
- ½ pack of pudding powder (cream pudding powder)
- 2 tbsp apple juice
- 2 tbsp almond flakes
- 2 tbsp powdered sugar
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes
Make a crumble pastry from the first 7 ingredients. Grease a springform pan and press about 3/4 of the crumble into the pan, forming a 1 cm high rim. Mix the rhubarb, apples, custard powder, 60 g sugar, and apple juice and pour it onto the crumble pastry. Sprinkle the remaining crumble and flaked almonds on top. Bake the pie in a preheated oven at 180°C for 50 minutes. If desired, sprinkle the cooled pie with powdered sugar.
