Spicy pork fillet with mint yogurt sauce

Ingredients for 4 servings:

  • 1 bay leaf
  • 1 tbsp fennel seeds
  • 1 tbsp mustard seeds
  • 1 tbsp coriander seeds
  • 1 tbsp caraway seeds
  • 1 tbsp allspice berries
  • 1 pinch of cinnamon
  • 1 tsp. clove powder
  • 800 g pork fillet(s)
  • ½ tsp sea salt
  • 5 tsp pepper
  • 2 tbsp Dijon mustard
  • 2 tbsp olive oil
  • 1 garlic clove(s)
  • 1 sprig(s) mint
  • 200 g natural yogurt
  • 50 g crème fraîche
  • 1 tsp lemon juice
  • 1 pinch(s) of sugar
  • Salt
  • pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Coarsely grind the spices in a mortar and pestle. Place all of the spice mix ingredients in a deep plate. Rinse the pork fillet under cold water and pat dry. Season with salt and pepper. Spread a thin layer of mustard over the fillet and coat with the spice mix. Sear the fillet in hot olive oil for about 5 minutes on all sides. Then place it in the solid cooking container and steam at 160°C for 20-25 minutes. For the sauce, peel and finely chop the garlic. Wash, dry, and chop the mint. Mix all of the ingredients together to make a sauce and season with salt and pepper.
