Rhubarb and Strawberry Tiramisu

- 150 g Rhubarb
- 150 g Strawberries
- 175 g Sugar
- 100 ml Orange juice
- 2 tablespoon Orange liqueur
- 12 Ladyfingers
- 500 g Mascarpone
- 500 g Quark
- 1 packet Vanilla sugar
- 2 tablespoon Pistachios
- Wash, clean and chop the rhubarb and strawberries.
- Caramelize 50 grams of sugar in a saucepan and add half of the strawberries and rhubarb and let simmer for 5 minutes.
- Add the remaining rhubarb and strawberries and simmer for another 1 minute, place in a bowl and allow to cool.
- Place spoon biscuits in a baking dish, stir together the orange juice and liqueur and sprinkle the biscuits with them.
- Mix the mascarpone, vanilla sugar, the rest of the sugar and the quark and distribute the cream evenly on the biscuit.
- Now put the rhubarb and strawberry compote on it, fold it into the cream and chill for about 2 hours.
