Rhubarb crumble

Ingredients for 4 servings:

  • 250 g rhubarb
  • 250 g apples
  • 1 orange(s), untreated, grated peel and juice
  • ½ tsp cinnamon
  • 45 g brown sugar
  • 50 g flour
  • 35 g butter
  • 25 g brown sugar
  • 20 g nuts, roasted, chopped or grated

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the rhubarb and cut into 2.5 cm pieces. Peel and slice the apples. Add the apple slices, orange zest, and orange juice to the rhubarb. Bring gently to a boil and simmer for about 2-3 minutes. Season with cinnamon and sugar, and pour into a baking dish, filling it only 2/3 full. Sift the flour and knead in the butter until a fine crumb forms. Add the sugar and nuts. Pour evenly over the fruit and spread evenly. Bake in a preheated oven at 200°C for about 30 minutes. Serve hot or cold.
