Ingredients for 6 servings:
- 600 ml water
- 6 large apples
- 250 g rice pudding
- 1 can coconut milk, approx. 400 g
- 100 g raw cane sugar
- 120 g raisins
- 1 orange(s)
- 2 tsp cinnamon
- 200 g soy quark (quark alternative)
- 1 vanilla pod(s)
- Fat for the mold

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Mix the water with the coconut milk and half of the sugar in a non-stick saucepan and bring to the boil. Stir in the rice pudding. Simmer on low heat for 20 minutes, stirring frequently. Then let stand for 10 minutes. In the meantime, peel and chop the apples, drizzle with the orange juice and mix with the other half of the sugar, the cinnamon and the raisins. Mix the quark with the inside of the vanilla pod and mix into the rice. Then stir in the apple mixture. Grease a large casserole dish and pour in the apple and rice mixture. Bake in a hot oven at 220°C (top/bottom heat) for approx. 40 minutes. Any kind of compote goes well with it. If you like, you can sprinkle the casserole with a little vanilla sugar. Instead of apples, the casserole is also delicious with cherries or pineapple. Tastes good hot or cold.
