Rice lasagna

Ingredients for 4 servings:

  • 500 g rice
  • 30 g butter
  • 300 g creamed spinach
  • 240 g ricotta
  • 30 ml milk
  • 1 garlic clove(s)
  • 100 g Parmesan
  • 700 ml tomato sauce
  • 250g mozzarella
  • 20 slices of ham

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 15 minutes

Cook the rice for 15-20 minutes (does not apply to quick-cooking rice; if in doubt, cook according to the package instructions). Melt the butter in a pan and fry the spinach in it. Then add the spinach to a bowl and mix with the ricotta, milk, and garlic. Mix the rice with 60g of Parmesan and 500ml of tomato sauce. Grease a 2-liter baking dish and add a layer of rice. Then add a layer each of mozzarella, spinach, and ham and repeat until all is used up. Finally, drizzle with the remaining 200ml of tomato sauce. Cover the casserole with aluminum foil and bake at 180°C for 10 minutes. Then remove the foil, sprinkle the casserole with Parmesan, and re-cover. Bake for another 10 minutes and serve.
