Coconut-Lime Soufflé

Ingredients for 4 servings:

  • 1 lime(s)
  • 3 egg yolks
  • 230 ml coconut milk
  • 1 tbsp flour
  • 1 tbsp cornstarch
  • 80 g butter
  • 3 egg whites
  • 50 g sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 20 minutes

Grate the lime and beat the egg yolks until frothy. Combine the coconut milk, flour, cornstarch, and butter in a saucepan and heat gently, stirring until thickened. Turn off the heat and stir in the lime zest. Then stir in the frothy egg yolks. Bring everything to a boil over low heat, remove from the heat, and let cool completely. Beat the egg whites and sugar until stiff peaks form and fold into the cooled mixture. Grease soufflé dishes with butter and sprinkle with sugar. Spoon the batter into the dishes and bake at 180°C for 10 minutes. Dust with powdered sugar before serving.
