Rice Meat with Pumpkin

The perfect rice meat with pumpkin recipe with a picture and simple step-by-step instructions.

  • 500 g Ground beef
  • 1 Coffee pot Jasmine rice
  • 4 Mini patisson
  • 3 Red peppers
  • 5 Vine tomatoes
  • 2 Onions
  • 3 tablespoon Tomato paste concentrated three times
  • 1 small Leek stick
  • 3 teaspoon Green curry paste
  • 2 Garlic cloves chopped
  • 1 tablespoon Thyme honey
  • 1 tablespoon Sweet paprika powder
  • 500 Milliliters Unsweetened coconut milk
  • 2,5 Coffee pots Vegetable broth
  • 1 Clementine
  • Salt
  • Coriander leaves
  1. Wash the UFOs well, remove the sand, cut them into small pieces and remove the core if necessary. I didn’t do this as the UFO has very few kernels and the kernels are very soft. You can eat the UFO with its shell.
  2. Dice the onions and cut the leek into rings. Core and dice the pepper. Dice the tomatoes.
  3. Fry the minced meat until crumbly. Add the honey and tomato paste and let it caramelize slightly. Reduce the heat and add the onions and fry briefly. Add the rice and fry briefly.
  4. Add the vegetables and fry for about 3 minutes. Deglaze with the vegetable stock. Add the garlic, curry paste and salt. Squeeze the clementine and add the juice. Let simmer for about 25 minutes. Stir frequently. Possibly add a little more water.
  5. Reduce the heat further. Just keep the rice meat warm, add the coconut milk and paprika powder. Let rest for about 10 minutes. Season to taste with salt.
  6. Reserve with a few coriander leaves or parsley.
