Ingredients for 4 servings:
- ½ liter of milk
- 1 vanilla pod(s), slit
- 1 piece(s) cinnamon, whole
- ½ lemon(s), peel
- 100 g rice (short grain rice)
- 75 g sugar
- 60 g butter
- 3 egg yolks
- 1 tsp cinnamon
Instructions

Spanish-style rice pudding
Bring the milk to a boil with the vanilla pod (and its seeds), the cinnamon stick, and the lemon zest. Then add the rice, reduce the heat, and simmer for about 20 minutes, until the rice is tender. Discard the vanilla pod, cinnamon stick, and lemon zest. Remove the pan from the heat and immediately stir in the sugar and butter. Finally, stir in the three fresh egg yolks, sprinkle with cinnamon, and serve immediately.
