Rice with spinach and feta cheese

Ingredients for 3 servings:

  • 1 pkt. leaf spinach, frozen
  • 1 onion(s)
  • 1 clove(s) garlic
  • 1 cup crème fraîche
  • 200 g sheep’s cheese
  • pine nuts
  • 150 g rice

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Thaw the spinach leaves. Dice the onion and sauté in a pan. Crush the garlic and add the spinach leaves. Meanwhile, cook the rice. Then add the rice to the pan with the spinach leaves and let it simmer for about 10 minutes. Stir in the crème fraîche. Transfer everything to a baking dish and sprinkle 200g of diced feta cheese over the top. Bake at 200°C for 35 minutes. Serve with toasted pine nuts (no fat in the pan).
