Roast beef rolls

Ingredients for 14 servings:

  • 14 slices of roast beef
  • 100 g arugula
  • 250 g cream cheese
  • 1 m.-sized onion(s)
  • 60 g tomatoes, dried in oil
  • e.g. salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Finger food with a Mediterranean touch, suitable for parties

Drain the sun-dried tomatoes and dice finely. Dice the onion and sauté in just under 1 tablespoon of tomato oil. Add the tomatoes and sauté for about 2 minutes. Allow this mixture to cool. Wash the arugula and spin it dry. Set aside 2-4 leaves for each roast beef slice, depending on your taste. Finely chop the remaining arugula. Mix the cream cheese, tomato and onion mixture, and the finely chopped arugula with a little salt and pepper, and season to taste. Spread about 1 teaspoon of the cream cheese mixture onto each roast beef slice. Arrange the arugula leaves decoratively on top, leaving a little overhang on each side of the meat, and roll up the roast beef starting from the short side. Arrange the rolls on a platter with the reserved arugula leaves and chill.
