Roast beef with apple and cheese crust

Ingredients for 4 servings:

  • 4 large schnitzels, beef, or thin slices of roast beef
  • 40 g flour, smooth
  • 30 g butter
  • 250 ml milk
  • 1 apple, sour
  • 1 egg yolk
  • 100 g cheese, spicy, grated, e.g. Emmental
  • 2 tbsp mixed herbs, chopped
  • 1 pinch(s) of cayenne pepper
  • 1 pinch of nutmeg
  • salt and pepper
  • ½ lemon(s), juice
  • Oil, or clarified butter, for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Lightly fry the flour in melted butter, stirring constantly. Pour in the milk, stir until smooth, and simmer on low heat for about 5 minutes, stirring frequently. Season with salt, pepper, cayenne pepper, and nutmeg. Remove the sauce from the heat and let it cool slightly. Meanwhile, peel and core the apple, and cut it into small cubes. Place it in a bowl and mix with the lemon juice. Mix the egg yolk, cheese, and herbs with the sauce and add the apple pieces. Preheat the oven to the grill setting. Pound the meat lightly, score the edges, season with salt and pepper, dust with flour, and fry on both sides in hot oil or clarified butter. Place side by side on a baking sheet, brush with the sauce, and bake in the oven until golden brown. Serve with broccoli and parsley potatoes.
