Roast beef with avocado salad

Ingredients for 2 servings:

  • 150 g roast beef, sliced
  • 1 avocado(s)
  • 40 g arugula
  • 1 tsp lemon juice
  • 1 spring onion(s) or shallot
  • 1 tsp mustard
  • 2 tbsp Balsamic vinegar, bianco
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • salt and pepper

Working time approx. 15 minutes; Total time approx. 15 minutes

if you want it to go quickly…

Arrange the roast beef on plates. Dice the avocado and drizzle with lemon juice. Chop the spring onion and mix with the avocado. Combine the mustard, balsamic vinegar, oil, and soy sauce, and season. Mix 3/4 of the sauce with the avocado mixture and arrange on top of the arugula. Drizzle the roast beef with the remaining sauce.
