Roast pork in a bed of salt

Ingredients for 6 servings:

  • 2 kg roast pork neck
  • 500 g salt

Instructions

Working time approx. 5 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 5 minutes

Pour the salt into a suitable dish (about 2 cm deep is sufficient). Lightly salt the pork roast all over and simply place it in the dish. Then place it in a preheated oven at 180-200°C (convection oven) and roast for 1 hour per kilogram. No turning, no basting, nothing. If you like, rub the roast with herbs, such as thyme, rosemary, or garlic.
