Roast Pork – Sweet and Sour

The perfect roast pork – sweet and sour recipe with a picture and simple step-by-step instructions.

Grill

  • 800 g Roast pork
  • 1 piece Fresh celery
  • 1 Carrot
  • 1 Onion
  • Salt
  • Pepper
  • 300 ml Meatsoup

filling

  • 2 Onions
  • 6 Prunes

Sauce

  • 200 g Fresh plum
  • 200 g Butter
  • 1 tablespoon Sugar brown
  • 1 tablespoon Apple Cider Vinegar
  • 2 teaspoon Plum jam

Grill

  1. Wash the meat – pat dry and cut a pocket into it.
  2. Clean and chop the celery, carrot and onion.

filling

  1. Cut the dry plums and peeled onions into cubes, mix them together, put them in the pocket of the roast – tie with some kitchen twine and season with salt and pepper.
  2. Put the onion, carrot and celery in a prepared roasting tube, place the roast on top, pour the stock over it and close the roasting tube tightly.
  3. Place the roasting tube on a cold baking sheet, cut once about 1 cm with the weld seam upwards and vertically at the weld seam
  4. Now put it in the 180c. (Convection) -warm oven for 90 minutes

Sauce

  1. Wash the fresh plums, core them and cut into wedges.
  2. Heat some butter in a pan and sauté the plums, sprinkle with sugar and caramelize a little.
  3. Take the roast out of the roasting tube and keep warm.
  4. Pass the meat stock through a sieve and add the vinegar to the plums with the plum jam, salt and pepper to taste.
  5. If you want, you can thicken the sauce a little.
  6. Cut the meat into slices and serve with a little sauce with dumplings and red cabbage.
