Ingredients for 20 servings:

  • 375 g flour
  • 1 packet of yeast (dry yeast)
  • 175 ml milk, lukewarm
  • 75 g sugar
  • 75 g butter, soft
  • 1 egg(s)
  • 1 tsp salt
  • 150 g butter (half-fat possible)
  • 150 g sugar
  • 2 tsp cinnamon
  • 200 g almond(s), coarsely chopped

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Yeast dough with a filling that tastes like roasted almonds

Sift flour into a bowl and mix with yeast and sugar. Add milk, butter, egg, and salt and knead with a dough hook until you have a smooth dough that no longer sticks to the bowl. It’s best to cover and let it rise in a warm water bath or in another warm place for about 1 hour. Bring the butter and sugar to a boil until foamy. Then add the cinnamon and almonds and let it cool slightly. Roll out the yeast dough to about 1/2 cm thick and cut into long triangles. Spread 1-2 tsp of the almond mixture on each triangle and roll it up from the smooth side to the tip, pressing the tip together with the dough using your fingertips. Place on a baking sheet lined with baking paper and let it rise for another 20 minutes. Meanwhile, preheat the oven to 200°C. Then bake the croissants for about 15-20 minutes until golden brown.
