Roasted grape dessert

Ingredients for 4 servings:

  • 500 g grapes, red, vineless
  • 4 tsp honey, liquid
  • 1 tsp extra virgin olive oil
  • ½ tsp sea salt flakes
  • 115 g mascarpone
  • 1 ½ tbsp rum or spiced rum
  • 1 tsp orange zest

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Place the oven rack on the middle shelf and preheat the oven to 245°C (475°F). Leave the grapes on the vines and divide them into smaller bunches. In a large bowl, gently mix the bunches, 2 teaspoons of honey, olive oil, and salt. Spread the grapes on a large rimmed baking sheet and roast for about 15 minutes, until wilted, moist, and caramelized in spots, turning halfway through. Meanwhile, whisk together the mascarpone, rum, grated orange zest, and the remaining honey. Arrange the bunches on dessert bowls or plates and top with a portion of the mascarpone cream.
