Baked Oatmeal Blueberry Banana

Ingredients for 1 servings:

  • 50 g oat flakes
  • 5 g flaxseed
  • ½ tsp baking powder
  • 1 banana(s)
  • 120 ml plant drink, milk or water
  • 100 g blueberries, fresh or frozen
  • 1 tsp, heaped chocolate cream or 2 dark chocolate cubes, optional
  • 25 g walnuts, large chopped, optional

Preheat oven to 175°C (350°F). Place the oats, flaxseed, and baking powder in an ovenproof cereal bowl and mix briefly. Peel the banana, mash about 2/3 of it with a fork, and add the banana puree along with the plant-based milk to the bowl. Mix everything together. Add the blueberries and roughly chopped nuts and fold in. Make a well in the center and add 1 teaspoon of chocolate spread or 2 small pieces of chocolate cubes. Cover again with the oat mixture. Place in the hot oven and wait 25 to 35 minutes, depending on the oven and desired consistency. Notes: This recipe can be modified as desired—use chia seeds instead of flaxseed, or just rolled oats. The calorie information is for the basic recipe without the optional ingredients. I use soy light as plant-based milk. Tips for expanding the basic recipe (oat flakes, flaxseed, baking powder, plant-based milk) are: – cinnamon and apple pieces (replace the banana with applesauce here) – baking cocoa, banana, raspberries – baking cocoa, banana, peanut butter kernel and nuts Notes: The chocolate cream is homemade with baking cocoa, protein powder, plant-based milk, nut butter and low-fat cream cheese, as this makes it healthier and free from palm oil and the like. If milk is used, the recipe is no longer vegan.
