shell-less seeds of the Styrian oil pumpkin

Remove the pumpkin seeds from the pumpkin and discard any remaining flesh. Soak in salted water for approximately 12 hours. Drain and let dry for 2-3 hours. Spread on a baking sheet lined with baking paper or a silicone mat and roast in the oven at approximately 120°C for 15 minutes. The seeds should be lightly browned but not too dry; test frequently. Once cooled, store the seeds in a sealed container. The seeds of the Styrian oil pumpkin (Latin: Cucurbita pepo var. styriaca) are green and, thanks to a mutation, have no shell.
