Ingredients for 1 servings:

  • ½ liter buttermilk, lukewarm
  • 1 cube of yeast
  • 1 egg(s)
  • 1 tsp sugar
  • 2 tsp salt (heaped tsp)
  • 1 tbsp quark (heaped tbsp)
  • 1 kg flour
  • Flour for the roasting pan

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Dissolve the yeast in the lukewarm buttermilk, then add it to the flour. Add the salt, sugar, egg, and curd cheese and knead everything well in a food processor. Shape the dough into a loaf and place it in a floured roasting pan. Moisten the surface with a wet hand and score several times crosswise with a knife. Cover and bake the dough immediately – do not let it prove! Bake for 70 minutes at 200°C (top/bottom heat) (gas mark 4) on the bottom rack. Important: do not open the roasting pan before the end of the cooking time!!! Tips: Can be modified with diced bacon, fried onions, grated cheese, or diced feta cheese. You can also sweeten it with raisins and chopped nuts; then use less salt and more sugar to taste.
