Ingredients for 8 servings:

  • 3 kg ribs (spare ribs)
  • 500 ml ketchup, hot
  • 500 ml honey
  • ½ tbsp vinegar
  • 3 tbsp mustard
  • 200 ml beer, dark
  • 10 cloves garlic
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest period approx. 1 day; Cooking/baking time approx. 30 minutes; Total time approx. 1 day 50 minutes

Blanch the spare ribs in boiling water for about 30 minutes. They should be nice and tender. Remove and let cool. Meanwhile, for the marinade, combine the ketchup, honey, vinegar, mustard, and dark beer. Crush the garlic and stir in the salt and pepper. Spread the marinade over the cooled spare ribs and let it marinate for 24 hours. Either place them on the grill and let them brown nicely, or bake them in the oven at 200°C for about 20 to 30 minutes.
