Rohrnudeln with plums and bacon

Ingredients for 3 servings:

  • 250 g flour
  • some milk
  • Yeast
  • 1 egg(s)
  • 1 pinch of salt
  • 2 tbsp sugar
  • 9 plums
  • 250 g diced ham
  • 60 g butter

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 30 minutes; Total time approx. 3 hours

Make a medium-firm yeast dough from flour, yeast, milk, egg, sugar, and salt and let it rest. Then, on a floured pastry board, cut the dough into 6 equal pieces. “Roll” the pieces, i.e., roll them into nice balls with pressure, and let it rest. In the meantime, fry the ham cubes and let them cool. Roll out the risen dough balls individually to the size of your hand and top with 3 plum halves and a tablespoon of bacon in your hand. Form them into closed noodles. Toss these in melted butter in a baking dish and layer them side by side. Bake at 200°C on the lower rack for about 30 minutes. You can also make one half with ham cubes (“appetizer”) and one half without (“dessert”).
