Ingredients for 1 servings:
- 2 eggs
- 2 tbsp flour
- 1 pinch of salt
- 100 ml milk, as needed
- 10 mirabelle plums
- 1 tbsp butter
- 1 tbsp sugar
- 15 mirabelle plums, halved and pitted
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
Put the flour in a bowl and mix with the eggs, salt, and milk to form a thick batter. Let it rest for 10 minutes. In a pan with melted butter, briefly caramelize the 10 prepared mirabelle plums and sugar; they shouldn’t be too soft. Pour a thin layer of batter over the plums and cook until they set. When the pancake is lightly browned, turn it over and finish cooking. For the mirabelle plum jam, put the 15 prepared mirabelle plums in a tall, narrow container and chop them up with a food processor until you get a jam. Tips: If you like, you can serve these pancakes with sour cream or sour cream. Well-frozen mirabelle plums can be used for the pancakes.
