Ingredients for 1 servings:

  • 1 tbsp honey
  • 300 ml water, lukewarm
  • 1 cube of fresh yeast, 42 g
  • 15 g salt
  • 300 g wheat flour, type 405
  • 100 g rye flour, type 997
  • 100 g rye flour, type 1150
  • 1 small egg(s)
  • some water
  • Flour , for the work surface

Instructions

Working time approx. 15 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Mix the honey with the water and crumble in the yeast. Mix with a mixer (dough hook). Now add the flour and mix everything together. Roll the dough into a thick log on a floured surface. Cut the log into 8-9 pieces, place the pieces on a baking sheet lined with parchment paper, and cut a cross into each piece. Whisk the egg and water together and brush the dough pieces with it. Cover and let the dough pieces rise for 20 minutes. Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Bake the rolls on the middle rack for about 20-30 minutes.
