Dissolve the yeast in the water and let it stand for 5 minutes. Then add the two types of flour, the chia seeds, and the salt and mix until you have a smooth dough. Knead the dough for at least 10 minutes. Let it rise for 1-2 hours, until it has doubled in size. Then shape the dough into 5 rolls, place them on a baking tray, and let it rise for another 30 minutes, until they have increased in size again. Preheat the oven to 200°C (top and bottom heat) (remove the tray with the rolls from the oven while you do this) and bake the rolls for 10 minutes at this temperature. After 10 minutes, brush the rolls with water and bake for another 15 minutes at 185°C.
