Ingredients for 2 servings:
- 3 tbsp oil
- 1 onion(s), diced
- 1 garlic clove(s), crushed
- 2 carrots, coarsely grated
- 50 ml vegetable stock
- 2 bell peppers, green and yellow, diced
- 10 cocktail tomatoes, sliced
- 2 tbsp processed cheese
- 1 tbsp, heaped herb cream cheese
- salt and pepper
- ½ tsp pizza seasoning
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Sauté the diced onion in oil, add the crushed garlic, and coarsely grated carrots. Sauté for about 5 minutes, then add the broth (not all of it at once) to soften the carrots. Cook for another 5 minutes. Now add the diced bell peppers and seasonings. Allow the liquid to almost evaporate, then stir in the melted cheese and cream cheese and season to taste. Add the sliced tomatoes and heat through. Tastes great on its own, but also with baguette or steak, etc.
