Ingredients for 2 servings:

  • 3 tbsp oil
  • 1 onion(s), diced
  • 1 garlic clove(s), crushed
  • 2 carrots, coarsely grated
  • 50 ml vegetable stock
  • 2 bell peppers, green and yellow, diced
  • 10 cocktail tomatoes, sliced
  • 2 tbsp processed cheese
  • 1 tbsp, heaped herb cream cheese
  • salt and pepper
  • ½ tsp pizza seasoning

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Sauté the diced onion in oil, add the crushed garlic, and coarsely grated carrots. Sauté for about 5 minutes, then add the broth (not all of it at once) to soften the carrots. Cook for another 5 minutes. Now add the diced bell peppers and seasonings. Allow the liquid to almost evaporate, then stir in the melted cheese and cream cheese and season to taste. Add the sliced ​​tomatoes and heat through. Tastes great on its own, but also with baguette or steak, etc.
