Rolls with kefir
- 310 ml Homemade milk kefir
- 10 g Fresh yeast
- 1 tsp Honey
- 500 g Spelt flour 630
- 2 tsp Barley malt extract
- 10 g Salt
- 1 tsp Apple cider vinegar
- 1 tbsp Rapeseed oil
Instructions
- Take a mixing bowl / food processor and first add * homemade milk kefir, honey and then the crumbled fresh yeast. Mix everything once and then add the remaining ingredients such as * apple cider vinegar No. 2.
- Now let it knead or do the whole thing with clean floured hands. Then lightly flour a work surface and place the bread roll dough on top. Cover and let lie / relax for 10 minutes. Now knead again and cut off 10 dough pieces of 90 grams each, fold and grind.
- Then take a baguette tin and grease it. Shape the ground dough pieces into an oval shape and place them in the mold one after the other, lightly floured. Then cover with a cloth, put in a warm place and let RISE for 20 minutes. In the meantime, preheat the oven to 200 ° degrees top / bottom heat.
