Peach and passion fruit cake

Ingredients for 1 servings:

  • 3 egg whites
  • 3 egg yolks
  • 75 g sugar
  • 100 g flour
  • ½ tsp baking powder
  • 1 ½ can peaches, drained, reserving juice
  • 1 ½ cups cream
  • 1 packet of vanilla sugar
  • 2 packs of cream stiffener
  • 250 g sour cream
  • 125 ml passion fruit juice
  • 3 packs of sauce powder (vanilla dessert sauce), for cooking

Beat egg whites until stiff peaks form. Beat egg yolks with sugar until frothy. Mix flour with baking powder and stir into the egg yolk mixture. Fold in egg whites, pour into a springform pan, and bake at 200°C for about 15 minutes. Let cool. Chop peaches. Whip cream with cream stiffener and vanilla sugar until stiff peaks form. Stir in sour cream, fold in peach pieces, and place a cake ring around the cake base. Spread peach cream over the cake base. Bring passion fruit juice, 250 ml peach juice (reserved from the can), and the dessert sauce to a boil, stirring continuously. Let cool, then spread over the peach cream. Keep refrigerated.
