Roros cucumber salad with sour cream and chives

Ingredients for 2 servings:

  • 1 m.-large cucumber(s)
  • 50 ml vinegar
  • 3 sweetener tablets or sugar to taste
  • Salt and pepper, black, freshly ground
  • 2 tbsp chives, frozen or freshly chopped
  • 150 ml sour cream, maybe a little more
  • 1 tsp oil (sunflower oil)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Make a spicy marinade from vinegar, sweetener (dissolve tablets in the vinegar) or sugar, and ½ teaspoon of salt. Stir in the oil. Peel the cucumber and slice it into not-too-thin slices. Sprinkle the chives over the top. Add the marinade to the cucumber slices, mix everything together, and let it sit for about 10 minutes. Add the sour cream and mix gently. Sprinkle with freshly ground black pepper. This cucumber salad is perfect as a small, refreshing dinner in the summer, perhaps served with a slice of buttered bread or a pretzel.
