Rowan mustard

Ingredients for 1 servings:

  • 150 g rowan berries
  • 10 tbsp vinegar (apple aperitif vinegar)
  • 5 tbsp honey
  • 1 tbsp sugar
  • 4 tbsp maple syrup
  • 50 ml white wine, sweet
  • 70 g mustard powder

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 30 minutes

– also called rowanberry –

Puree the washed rowan berries. Stir in all the other ingredients, gradually adding the mustard flour, and puree briefly again. Heat, but not above 40°C. Let stand for about 2 hours. The mixture will thicken further; add more wine if necessary. Then pour into jars that have been rinsed with hot water. This mustard has a slightly bitter taste, so I add honey, sugar, and maple syrup. It tastes great on meat, cheese, and even sausages.
