Russian apple pie with rum

Ingredients for 1 servings:

  • 250 g butter
  • 250 g sugar
  • 3 eggs
  • 125 g hazelnuts, ground
  • 1 tbsp cinnamon
  • 2 tbsp cocoa powder
  • 1 packet of vanilla sugar
  • 200 g flour
  • 1 packet of baking powder
  • 4 apples
  • 6 tbsp rum or
  • 3 lemon(s), untreated, the juice
  • e.g. powdered sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Cream the butter, sugar, and eggs until fluffy. Mix in the hazelnuts, cinnamon, cocoa, and vanilla sugar. Sift the flour and baking powder into the mixture and stir in. Peel and core the apples, cut them into small pieces, and soak them in rum. Fold the soaked apples into the batter. (If children are eating, do not use rum; alternatively, use the juice of 2-3 lemons.) Pour the batter into a 26cm cake tin and smooth it down. Bake the cake at 180°C for 70-80 minutes. Let the cake cool in the tin. Once cooled, sprinkle with powdered sugar.
