Ingredients for 1 servings:

  • 200 g butter or margarine
  • 10 medium-sized egg yolks
  • 200 g flour (wheat)
  • 200 g sugar
  • 10 m.-sized egg whites
  • 200 g sugar
  • 250 g hazelnuts, ground
  • 100 g chocolate shavings (grated block chocolate)

For the dough, cream the butter or margarine in a mixing bowl with a hand mixer (or whisk) on high speed until smooth. Gradually stir in the sugar. Stir until the mixture forms a thick batter. Gradually stir in the egg yolks. Sift the flour and stir in briefly on medium speed in 2 batches. Place the dough on a greased baking tray (30 x 40 cm) and smooth it out. For the topping, beat the egg whites until stiff. The peaks should be stiff enough that a knife cut remains visible. Gradually beat in the sugar briefly, then fold in the hazelnuts and chocolate. Spread the egg white mixture over the dough. Place the baking tray in the oven. Place the baking tray on a wire rack. Allow the pastry to cool slightly and then cut into cubes. Allow the pastry to cool.
